The Introduction of Galactomannan
Galactomannan (GM) or galactose mannan is a polysaccharide containing mannose backbone and galactose side groups. More accurately, galactomannan is linear (1-4) - linked β- D-type mannose (1-4) linked beta-D-mannopyranose) backbone is connected to their 6-junction points α- D-type galactose polysaccharide, i.e. 1-6-linked α- D-type galactose (1-6-linked alpha-D-galactopyranose). Some plants and fungi contain components of galactomannan.
The Application & Function of Galactomannan
Galactomannan extracted from beans is often used as a stabilizer and thickening agent in food. Guanhua bean gum and locust bean gum are widely added to ice cream to enhance the appearance and texture of the ice cream and reduce its melting state. Robinia bean gum has also been extended to be used in cream cheese, fruit preparation, and salad dressings. The acceptance of Tara gum as a food ingredient is gradually increasing, but the usage is still much smaller than that of Guanhua bean gum and locust bean gum. Guanhua bean gum has the highest proportion of food applications among the above types, due to its high correlation with its low and stable price. Except that galactose is only dissolved in a small amount of hot water, most of them can be dissolved in cold water.
