Monoglyceride (MG) is an organic compound with the molecular pattern C21H42O4. Monoglyceride is a polyol, nonionic surfactant that shows excellent surface activity due to its structure of an oleophilic long chain alkyl group and two hydrophilic hydroxyl groups.
