1,3-Dihydroxyacetone, also known as Dihydroxyacetone is an organic compound with the molecular formula C3H6O3, a polyhydroxy ketose, the simplest ketose. Appearance is white powder crystal, easily soluble in organic solvents such as water, ethanol, ether and acetone, melting point is 75-80℃, water solubility >250g/L (20℃), with sweet taste, stable at pH 6.0.
