The Introductction of Glyceryl Monostearate :
Lyceride monostearide (MG) is an organic compound with the formula C21H42O4 that can be lyceride in two configurations, 1-MG and 2-MG. According to the names of the main fatty acids, monosaccharides can be divided into glycerol monostearate, glycerol monolaurate, glycerol monooleate, etc. Among them, glycerol monostearate is the most productive and applied one. Single glyceride is generally oily, fat or waxy, the color is light yellow or ivory, greasy or tasteless, which is related to the size of the fat group and the degree of saturation, with excellent sensory characteristics. Monoglycerides are insoluble in water and glycerol, but can form a stable hydration dispersion in water. In addition, monoglycine is a polyol nonionic surfactant. Because of its structure with one oil-philic long chain alkyl group and two hydrophilic hydroxyl groups, it has good surface activity and can play the role of emulsifying, dispersing, defoaminating, anti-starch aging and so on. It is one of the most widely used emulsifiers in food and cosmetics.
The Application & Function of Glyceryl Monostearate :
1. Can be used for food and medicine fungicide, its antibacterial activity is strong, antibacterial spectrum is wide, can be used for meat products, dairy products, beer, soy sauce and other preservative, can also be used for orange, peach, lychee and other fruit preservation. Glycerol mono-laurate can form complex with starch and protein and reduce the antibacterial effect. It is almost ineffective against gram-negative bacteria. However, it has good compound effect with other fungicides such as potassium sorbate, so it is often used in compound formulation. [4]
