The Introductction of L-Carnosine :
L-Carnosine is a dipeptide of the amino acids β-alanine and histidine. It is highly concentrated in muscle and brain tissue. Carnosine has a variety of potentially beneficial antioxidant properties, which can remove reactive oxygen species and α-β unsaturated aldehydes formed by fatty acid peroxidation of cell membranes during oxidative stress. Carnosine is also a zwitterion, a neutral molecule with positive and negative ends.
