The Introduction of Phytosterol
Phytosterol is a functional component that exists in a free or combined state with fatty acids and sugars, and is widely present in the cell membranes of various plants such as vegetables and fruits.
Phytosterols are divided into three categories: 4-methylsterols, 4-methylsterols, and 4,4 '- dimethylsterols. 4-methylsterols mainly include Β- Sitosterol, stigmasterol, rapeseed sterol, and rapeseed sterol. The structure of plant sterols is basically similar to that of animal sterols, with the difference in the number of methyl groups connected at the c-4 position and the differences in the side chains at the c-11 position. Phytosterol is originally a non saponified substance of vegetable oils. In industry, it is extracted from the residue of soybean and rapeseed seeds as raw materials, as a byproduct during the production of vitamin E, or from the non saponified substance during the production of rice bran oil.
