The introduction of Lysozyme
Lysozyme, also known as Muramidase or n-acetylmuramide glycan hydrolase, is an alkaline enzyme that can hydrolyze mucopolysaccharides in bacteria. Lysozyme mainly destroys the interaction between N-acetylmuramic acid and N-acetylglucosamine in the cell wall β- 1,4 glycosidic bonds decompose the insoluble mucopolysaccharide of the cell wall into soluble glycopeptides, resulting in the rupture of the cell wall, the escape of the contents and the dissolution of bacteria. Lysozyme can also directly bind to negatively charged viral proteins and form complexes with DNA, RNA and apo proteins to inactivate the virus.
Application of Lysozyme
1. A natural anti infective substance with bactericidal effect. It has the functions of antibacterial, antiviral, hemostasis, detumescence and pain relief and accelerating the recovery of tissue function.
2. It has antibacterial effects on Gram-positive bacteria, aerobic spore forming bacteria, Bacillus subtilis, lichen bacillus, etc., but will not have adverse effects on human cells without cell wall. Therefore, it is suitable for the anti-corrosion of various foods.
3. Lysozyme specifically hydrolyzes the characteristics of bacterial cell wall, which is helpful to understand the structure of bacterial cell wall: the protoplast prepared by decomposing the cell wall can be used in academic research such as microbial classification and microbial breeding. In recent years, lysozyme has become an essential tool enzyme for cell engineering and genetic engineering, which is used to extract and manufacture enzymes, nucleic acids and active peptides.
